The Rules of Yankee Pie Apizza stem from our mission statement and, even more so, from our missteps. We uphold many conventions, some of which we reserve for introspection, and others, to benefit our patrons. Continuously seeking improvement, we strive to build upon these tenets. So, while we have a slew of principles, here are a few of our favorites, for now...

Rule #1

It's not pizza. It's ah-beetz.

Rule #1 has a fascinating origin story that harks back to the early days of Italian immigration in New Haven, CT. When the Neapolitan pizza-makers arrived, they would yell out "La Pizza!" to attract customers, but their thick northern Italian accents made it sound more like "Ah-beetz" to the locals. And as they say, the rest is history! So, the next time you're sinking your teeth into one of our delicious pies, remember that you're not just indulging in a meal - you're taking part in a culinary tradition that dates back generations! Rule #2

It's not burnt. It's charred.

And it's beautiful.

This emanates from the coal-fired ovens historically used to craft pizza in New Haven, Ct. While we are no longer using those coal fired ovens, we can still replicate the flavor and char of the past. We don't care about perfect circles or perfect cuts.

Our unique Wooster Street Style cut is a tribute to our origins as a New Haven Style pizzeria. The pizzas were originally oval or football shaped, so the Wooster Street style cut was created to ensure each piece had the perfect combination of charred crust and melted toppings. In a world fixated on perfection, it's refreshing to discover something intentionally designed to be different.

While we understand this style of cut may not be for everyone, we still encourage you to give it a try. But for those who prefer a more traditional look, don't hesitate to request a normal circle cut. Either way, we're happy to accommodate your preference at Yankee Pie Apizza in St. Marys, Georgia.
